The Talking Heads cover of Take me to the river, by Al Green is a great one, and Jimi Hendrix's cover of All along the watchtower by Bob Dylan is I think the definitive version, since Dylan's original sounds like a pack of howling dogs.

Both of those songs were actually on my original list. Thing is, that list was like 40 items long. I had a hell of a time narrowing it down to only ten... It was hard to eliminate those two - especially Hendrix. Dylan's original does sound like a pack of howling dogs - with sinus infections.
